CLAM FRITTERS 
1 qt. ground clam meat and juice
1 tbsp. sugar
1 tbsp. lemon juice
1 egg
1 tbsp. sherry
2 c. pancake flour (or enough to make it stick together)
1 c. milk (or enough to make mixture creamy)
1 pinch of salt

Mix together and make into patties. Fry until browned and serve with tartar sauce or sour cream.
