PIEROGI LASAGNA 
12-15 potatoes, boiled & mashed
3/4 lb. Cheddar cheese, grated
4 onions, finely chopped
1/2 lb. bacon, fried, drained & crumbled
1 stick butter
1 c. sour cream
Salt & pepper to taste
12 lasagna noodles

Cook noodles according to package, al dente. Mash potatoes and add cheese to potatoes, beat using a mixer. Add sour cream. Saute onions in butter until soft. Add half of onions to potato mixture as well as the bacon, salt and pepper.

Place layer of lasagna noodles in 9 x 13 inch pan, then a layer of potato mixture. Repeat ending with noodles. Top noodles with remaining onions and butter. Cover with foil and bake at 350 degrees until heated through 1-1 1/2 hours. (Can prepare ahead of time and frozen.)
