FRESH APPLE CAKE 
1/2 c. oil
2 eggs
2 tsp. baking soda
2 c. flour
4 c. chopped apples
2 c. sugar
1 tsp. salt
2 tsp. vanilla
1 c. pecans
2 tsp. cinnamon

Mix apples, sugar, cinnamon. Set aside. Add oil and eggs. Add vanilla. Add the apple mixture, with the oil and eggs and the dry mixture. Bake at 350 degrees for 45 minutes in a 9 x 13 inch pan.

FROSTING:

1 c. sugar
1 stick butter
1 sm. can Pet milk
1 tsp. vanilla
1/2 c. coconut (optional)

Boil 7 minutes. Frost when cake is cool.
