PUMPKIN COOKIES 
1/2 c. butter, softened
1 1/2 c. sugar
1 egg
1 c. cooked or canned pumpkin
1 tsp. vanilla
2 1/2 c. all-purpose flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1 tsp. nutmeg
1 tsp. cinnamon
1/2 c. diced, roasted almonds or walnuts (opt.)
1 c. chocolate pieces

Cream butter and sugar together until light and fluffy. Beat in egg, pumpkin and vanilla. Mix and sift flour, baking powder, baking soda, salt, nutmeg and cinnamon. Add to creamed mixture; mix sell. Add almonds and chocolate pieces; mix thoroughly. Drop by teaspoons onto well greased cookie sheet. Bake at 350 degrees for 15 minutes or until slightly browned. Remove from cookie sheets while still warm, cool on racks. Makes about 6 dozen cookies.
