COUNTRY YEAST BREAD 
4 c. scalded milk
4 tsp. salt
4 tbsp. butter
4 tbsp. honey or brown sugar
2 pkgs. yeast
1/4 c. warm water
9-10 c. flour

Add salt, butter and honey to hot milk. Let cool. Add yeast softened in warm water. Add enough flour to make stiff dough. When dough pulls from bowl, turn out. Add flour; knead until smooth. Let rise twice until double in bulk. Divide into 4 loaves. Let rise until double and will hold dent with finger. Bake at 350 degrees for 30 minutes. Butter top and turn out of pan.
