POTATO PANCAKES 
4 lg. potatoes, peeled
1/4 c. grated onion
2 eggs, slightly beaten
2 tbsp. flour
3/4 tsp. salt
Dash of nutmeg
Dash of pepper
Salad oil
Chill unsweetened applesauce

Grate potatoes or put through food processor to grated. Pat dry. (Make sure you have approximately 3 cups).

In a large bowl, combine grated potato with the next 6 ingredients. Heat about 1/8 inch of oil in a heavy skillet. (Can use non stick skillet and no oil).

For each pancake drop 2 tablespoons potato mixture into hot oil. Flatten with a spatula, fry 2 or 3 minutes on each side. Serve hot, with applesauce.
