EVENLYN'S BOILED RAISIN CAKE 
1 c. raisins
1 c. water or coffee
1 c. sugar
1/2 c. shortening
2 eggs
1 1/2 c. flour
1 tsp. baking soda
Pinch of salt
1 tsp. cinnamon
1/2 tsp. mace
1/4 tsp. cloves

Boil raisins and water-coffee 20 minutes. Drain off juice and save. Mix together remaining ingredients. Add enough water or coffee to saved liquid to make 3/4 cup. Mix into other ingredients. Bake in 13 x 9 inch layer pan for approximately 40 minutes or cupcakes for 25 minutes at 350 degrees.

Note: water will result in light colored batter and coffee in dark. Frost with Buttercream Frosting made with lemon juice.
