BREAD STICKS 
1/2 oz. yeast cake or 1 1/2 tsp. dry yeast
1 1/2 c. lukewarm water (warm water if using dry yeast)
3 1/2 c. all purpose flour (unbleached if available)
2 tbsp. olive oil
1 1/2 tsp. salt

Dissolve yeast in water; let stand 10 minutes. Mound 3 1/2 cups flour in large bowl; make a well and pour in yeast, oil, salt. Mix in well then incorporate flour a little at a time. When flour incorporated place on floured surface and knead until surface elastic, about 8 minutes. Form into ball; dust with flour; cover with towel and let rise until doubled.

Preheat oven to 400 degrees. Flour baking sheets. Cut dough into 5 pieces. Roll each piece out into 3/8 inch thick rectangle. Cut each piece crosswise into 5 pieces. Roll these between palm of hand and surface to form stick. Let breadsticks rise about 5 minutes. Bake about 25 minutes or until golden brown. Yield: 25 breadsticks.
