BEST CHOCOLATE CHIP COOKIES 
2/3 c. shortening
2/3 c. butter, softened
1 c. white sugar
1 c. light brown sugar
2 eggs
2 tsp. vanilla
3 1/4 c. flour
1 tsp. baking soda
1 tsp. salt
1 c. mini chocolate chips & nuts, if desired

Mix shortening, butter, sugars, eggs and vanilla. Stir in remaining ingredients. Turn dough onto lightly floured board. Shape dough into rolls 2 inches in diameter and about 8 inches long. Wrap in plastic wrap and refrigerate up to 1 month or frozen 3 months. Slice and bake at approximately 375 degrees for 8 to 10 minutes. For Peanut Butter Cookies, add 1 cup peanut butter to shortening and butter.
