BEEF JERKY
1/4 c. soy sauce
1/2 tsp. garlic powder
1/2 tsp. freshly ground pepper
1 1/2 lbs. flank steak
1/4 c. Worcestershire sauce
1/2 to 1 tsp. onion powder
1 tsp. liquid smoke

In a large mayonnaise jar, mix together all ingredients but the meat. Trim fat off the meat and slice it 1/8 inch thick. (Semi-freeze meat for 1 hour for easier slicing.) Add the meat to the marinade. Marinate overnight in the refrigerator.

Drain marinated meat well on paper towels. Pat dry. Lay strips on oven racks. (Can sprinkle with additional seasonings if desired.) Place foil underneath. Roast at 120 to 140 degrees for 8 to 12 hours with oven door slightly open.
