WALNUT - RICE STUFFING AND
TOMATOES
 
1 lg. onion, chopped
1 c. brown rice
1/4 c. chopped fresh parsley
1 3/4 c. water
2 tbsp. lemon juice
Salt to taste
1 c. chopped nuts (walnuts or pecans)
Scooped out portions of tomatoes

Cook above ingredients until done. Stuff tomatoes. Bake, uncovered, at 350 degrees for 30 minutes.
