PUMPKIN SPICE CAKE 
2 c. flour (1 whole wheat if desired)
2 tsp. baking powder
1 tsp. baking soda
2 tsp. cinnamon
1/4 tsp. cloves
1/4 tsp. nutmeg
1/4 tsp. allspice
4 eggs
1 3/4 c. sugar
2 c. pumpkin
1 c. oil
1 c. chopped pecans (optional)

On mixer: Beat pumpkin, egg and sugar until well mixed. Add the oil and mix on slow for 1 minute. Then add flour, baking powder, baking soda and spices. Add nuts and continue mixing until well mixed. Place in well buttered 9x12 inch pan.

Bake at 350 degrees, 35-40 minutes. Toothpick in center should come out clean. Good unfrosted, but could use Cool Whip.
