COCOA BRANANA MUFFINS 
1 c. flour
2 tsp. baking powder
1/2 tsp. salt
2 tbsp. cocoa powder
1/2 c. sugar
1 1/2 c. All-Bran cereal
3/4 c. skim milk
2 egg whites
2 tbsp. vegetable oil
1 c. sliced ripe banana

Stir together first 5 ingredients. Measure into a large bowl the cereal and milk, let stand 2 minutes or until softened. Add the egg and oil to the cereal, beat well. Stir in the banana, then add the flour mixture. Put into 6 greased muffin cups or 6 ounce custard cups. Bake at 400 degrees for 30 minutes.
