ZUCCHINI CAKE WITH CREAM CHEESE FROSTING | |
3 c. grated, unpeeled zucchini 3 c. sugar 1 c. chopped nuts 1 1/2 c. oil 4 eggs 2 tsp. cinnamon 2 tsp. baking powder 1 tsp. baking soda 1/2 tsp. salt 3 c. flour CREAM CHEESE FROSTING: 1 (3 oz.) pkg. softened cream cheese 1/4 c. softened butter 2 c. sifted powdered sugar 1 tsp. vanilla Mix zucchini, sugar, oil and eggs; beat well. Combine dry ingredients and nuts. Add to zucchini mix. Put in greased and floured tube or cake pan. Bake at 350 degrees for 1 hour or until tester comes out clean. Cool before removing cake. Frost. For cream cheese frosting, blend all the ingredients together. If too runny, add more sugar. |
