COLD GREEN BEAN SOUP | |
1 1/2 c. chicken broth 1/2 c. chopped onion 1/2 tsp. dried savory 1 1/2 c. cut green beans 2 tbsp. butter 2 tbsp. flour 1/2 tsp. salt Few dashes white pepper 1 c. milk In saucepan, combine chicken broth, onion, savory and green beans. Bring to boil. Reduce heat; cover and simmer for 15 to 20 minutes or until vegetables are tender. Place vegetable mixture in blender or food processor and process until smooth. In same saucepan, melt the butter. Blend in flour, salt and pepper. Add milk and cook until thickened. Stir in vegetable puree. Pour into bowl and refrigerate, covered, for several hours. |
