PEANUT BUTTER COOKIES 
1 c. butter
1 c. crunchy peanut butter
1 c. granulated sugar
1 c. brown sugar
2 eggs
1 tsp. vanilla
2 1/2 c. sifted all purpose flour
1 1/2 tsp. baking soda
1/2 tsp. salt

Preheat oven to 375 degrees. Thoroughly cream butter, peanut butter, sugars, eggs and vanilla with a mixer. Mix the dry ingredients together and blend into the creamed mixture. Shape into 1" balls. Roll these in granulated sugar. Place these 2" apart on an ungreased cookie sheet. Criss cross with fork to slightly flatten. Bake at 375 degrees for 7 minutes (the cookies should be soft and chewy). Cool slightly and remove from pan. Makes about 4 to 5 dozen.
