MOCK PECAN OR OATMEAL PIE 
2 eggs, beaten until fluffy
3/4 c. sugar
3/4 c. corn syrup
2 tbsp. all-purpose flour
1/4 c. butter
1 tsp. vanilla
3/4 c. regular oatmeal

Beat eggs. Add sugar. Beat until thick. Then add remaining ingredients. Pour into 9-inch pie crust in Pyrex dish (or 2 aluminum pans for thinner pies). Bake at 350 degrees for 35 to 40 minutes. You can place a few pecan halves on top, if desired.
