MOCK PECAN PIE | |
1 1/2 c. brown sugar 1/2 c. Karo syrup (light or dark) 1 tbsp. melted butter 1 tbsp. vanilla extract 4 eggs, beaten 1 c. cooked pinto beans, mashed 1 (10 inch) unbaked pie shell Whipped cream or vanilla ice cream In a mixing bowl beat together the Karo, sugar, butter, vanilla and eggs. Stir in beans. Pour into pie shell. Bake at 350 degrees for 40 to 45 minutes or until a knife inserted into the center comes out clean. Serve warm or chilled with whipped cream or ice cream. Yield: 8 to 10 servings. |
