PORCUPINE MEATBALLS 
1 c. cooked rice
2 tbsp. minced onion
1 lb. ground beef
1 tsp. salt
1/4 tsp. pepper
2 tbsp. oil
1 c. condensed tomato soup
1 c. hot water

Combine rice, beef, salt, pepper, and onion. Mix well. Shape into gold size balls. Brown balls in oil in heavy skillet. Grease 3 quart casserole. Arrange in casserole. Combine soup with water. Pour over meatballs. Cover. Microwave on high for 20 to 22 minutes. Makes 6 servings. (Can also double recipe and bake in oven at 350 degrees for 1 hour.)

Since microwave ovens vary in power, you may need to adjust your cooking time.
