BRAZIL NUT COOKIES 
1 c. Brazil nuts, chopped
3/4 c. butter, softened
1/2 c. sugar
1 c. flour
3/4 c. cornstarch
1/2 tsp. salt
2 egg whites
1 tbsp. confectioners' sugar

Chop the nuts and set aside. In bowl, with mixer, cream together butter and sugar until fluffy. Combine the remaining dry ingredients; flour, cornstarch, salt and add to the creamed mixture, mixing well by hand. Add the 3/4 cup of nuts and the egg whites; mixing until the dough forms a ball.

Form dough into 1 inch balls and place on greased cookie pan, 1 inch apart. Bake in 400 degree oven for 10-12 minutes, or until golden brown on bottom. Remove from cookie pan and while warm, roll in a mixture of remaining nuts and the confectioners' sugar.

I use graham flour in place of the regular. I also used more powdered sugar. These cookies were fantastic, melt in your mouth! I will do these in my holiday cookie platter!
