FRESH APPLE CAKE 
4 c. chopped, peeled apples
2 c. sugar
1 c. chopped pecans
2 tsp. vanilla
1/2 c. liquor (creme de cocoa)
1 c. coconut
1/4 c. cherries and juice
3 c. all-purpose flour
2 tsp. baking soda
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. cloves
1/4 tsp. ginger
1 c. Wesson oil
2 eggs

In a medium sized bowl combine first 8 ingredients and soak overnight. The next day mix all dry ingredients together. In a large bowl beat the eggs and oil together thoroughly. Then add dry ingredients alternately with apple mixture. Pour into a greased and floured Bundt pan or tube pan. Bake approximately 1 hour at 350°F.
