1 1/4 c. cooking oil
2 c. sugar
3 eggs
2 tsp. vanilla
3 c. flour
1 tsp. baking soda
1 tsp. salt
3/4 tsp. cinnamon
1 c. pecans, chopped
3 apples, peeled, diced

Combine oil, sugar, and eggs. Beat at medium speed for 3 minutes. Add vanilla. Combine dry ingredients; add. Fold in apples and pecans. bake in tube pan at 325 degrees for 1 hour and 20 minutes or until done.
