QUICK FRENCH ONION SOUP 
1 c. bread cubes
2 c. thinly sliced onions
3 c. boiling water
4 beef bouillon cubes
4 tbsp. melted butter
2 tbsp. grated Blue cheese or Mozzarella cheese

Place bread cubes in broiler until lightly brown. In a pot, cook onions in 2 tablespoons of butter until soft. blend in boiling water with bouillon cubes. cover; cook for 10 minutes. IN a bowl, combine bread cubes and the remaining butter and cheese. Pour soup into a serving bowl. Garnish with bread mixture.

Serves 6.
