FISH CASSEROLE | |
1 lg. onion, chopped fine 1 tbsp. butter 2 c. whitefish, cooked and flaked 3/4 c. fine bread crumbs, plain or seasoned 1/2 c. Finlandia cheese or Swiss cheese, shredded 2 tbsp. parsley flakes 2 tbsp. lemon juice 1/8 tsp. salt 1/4 tsp. pepper 2 lg. eggs, beaten slightly Preheat the oven to 400 degrees and lightly grease shallow casserole or 9-inch round baking dish. Place 1 tablespoon butter in frying pan over medium heat. When melted, add onions and fry until done. Set aside to cool. In large bowl, mix together fish, 1/2 cup bread crumbs, and cheese. Add cooled onions. Mix well. Add parsley, lemon juice, salt and pepper. Toss slightly. Add beaten eggs and mix. Spoon mixture into casserole dish and top with remaining bread crumbs. Bake for 25 minutes or until done. |
