BUFFALO WINGS 
Chicken wings
Fresh ginger, 1/8 inch slices
1 or 2 whole jalapenos, chopped
1 c. orange juice
1/4 c. honey
1/2 c. chicken stock
12 oz. "Red Hot" Durkee Sauce
V-8 (little if wanted)

Fresh finger, 1 or 2 whole jalapenos: Sweat in cooking oil at high temperature 2-3 minutes. Deglaze with orange juice, 1 cup. Reduce by 1/2.

1/4 cup honey - Stir in thoroughly. Add 1/2 cup chicken stock. Let reduce by 1/2.

Add 12 ounce bottle of "Red Hot" Durkee Sauce, V-8 (a little) if wanted. Strain. Pour over wings.

Deep fry wings until lightly browned, then pour over sauce. 20-30 minutes, 350-375 degrees F. 1/2 way done, stir around.
