PASTA SALAD 
2 pkgs. rainbow pasta (spiral)
1 (16 oz.) block firm tofu
1 bunch broccoli
1 bunch carrots
1 head cauliflower
1 green bell pepper
1 yellow bell pepper
Olives, if desired
10 cherry tomatoes
2 bottles poppy seed dressing

Boil pasta until al dente. let cool. Drain and cut tofu in small bite size bits. Cut all vegetables. Mix everything together in large bowl. Chill overnight. Serve as the main course with crusty French bread.
