ZUCCHINI ROUNDS 
1/3 c. Parmesan cheese
1/3 c. Bisquick
1/4 c. cheddar cheese (opt.)
1/8 tsp. pepper
2 well beaten eggs
2 c. grated zucchini

Mix together first 3 ingredients. Add pepper. Add eggs and zucchini. Melt 2 tablespoons butter in skillet over medium heat. Spoon mixture into pan and cook until firm and brown on both sides. Sort of looks like pancakes.
