APPLE RAISIN BREAD 
2 1/2 c. sugar
4 eggs, beaten
1 1/2 c. oil
1/2 c. chopped nuts
3 c. chopped apples
3 c. flour
1 tbsp. plus 1 tsp. vanilla
2 tsp. cinnamon
1 1/2 tsp. salt
1 1/2 tsp. baking soda
1/2 tsp. baking powder
2/3 c. raisins

Heat oven to 325 degrees. Generously grease and lightly flour bottoms only of 2 baking pan (9 x 5 x 3 inches). Beat all ingredients on low speed, scraping bowl constantly 1 minute. Bake 60-70 minutes. Store in refrigerator.
