CHINESE CHICKEN SALAD 
1/2 lb. chicken meat
1 head lettuce, shredded
4 green onions, sliced thin
2 oz. sai foon (bean thread) deep fried
Cilantros (optional and chopped)
2 tbsp. sesame seeds

DRESSING:

1/2 c. vegetable oil
2 tbsp. sesame oil
3 tbsp. white vinegar
2 tbsp. sugar
1 tsp. salt
1 tsp. dry mustard

For a little more flavor, boil chicken in soy sauce with a little sugar and chopped garlic.

Combine all ingredients and mix just before serving. If made ahead of time, combine lettuce, chicken, green onions, and cilantros in a bowl. Just before serving, add sai foon (bean thread), sesame seeds and dressing. Mix well.

DRESSING: Combine dressing ingredients in a jar.
