CHILI RELLENOS 
1 lb. hamburger, browned
3/4 c. thinly sliced Jack cheese
3/4 c. sharp Cheddar cheese
4 eggs, separated
1 lg. can evaporated milk
2 tbsp. flour
2 sm. cans green chilies
2 (8 oz.) cans tomato sauce

Split and de-seed chilies on paper towels. Beat egg yolks, add evaporated milk and set aside.

Layer in greased 13x9 pan: Cheddar cheese, chilies, Jack cheese, hamburger.

Beat egg whites until stiff. Fold in flour; spread over meat in pan. Pour on egg/milk mixture, then tomato sauce. Bake at 325 degrees for 1 hour. Cut into 12 squares.
