BIRTHDAY PINEAPPLE CREAM PIE 
1/4 c. cornstarch
2/3 c. sugar
1/4 tsp. salt
2 c. milk, scalded
3 yolks, slightly beaten
2 tbsp. butter
1/2 tsp. vanilla
1/2 c. crushed pineapple, thoroughly drained
3 egg whites
6 tbsp. sugar, additional
1 baked pie shell

Mix cornstarch, sugar and salt in top of double boiler. Gradually add scalded milk. Cook until thick, about 10 minutes, stirring constantly. Slowly add small amount of hot mixture to the slightly beaten egg yolks. Stir in remaining hot mixture, cook at least 5 minutes, stirring constantly. Cool slightly and add butter, vanilla and pineapple. Pour into cooled, baked pie shell and spread with meringue of the stiffly beaten egg whites and additional sugar. Bake at 350 degrees for 10 minutes or until meringue is golden brown.
