MEAT LOAF 
1 c. tomato juice
3/4 c. Quaker Oats (quick or old fashion, uncooked)
1 egg, beaten (opt.)
1/4 c. chopped onion
1 tsp. salt (opt.)
1/4 tsp. pepper
1 1/2 lb. lean ground beef

Heat oven to 350 degrees. Combine all ingredients except ground beef. Mix well. Add ground beef; mix lightly but thoroughly. Press into 8 x 4 inch loaf pan. Bake 1 hour. Let stand 5 minutes before slicing.
