FRIED RICE 
2 c. cooked rice
1 lb. fresh lean pork (thin strips) or
1/2 lb. bacon
1 green pepper, chopped
4 green onions, chopped
1/2 c. carrot, chopped (optional)
1/2 c. mushrooms
1 1/2 c. shredded cabbage (optional)
1 egg
2 tbsp. soy sauce
2 tbsp. oil

Beat egg and pour into wok or frying pan. Cook like a pancake, remove from pan, cut into strips, set aside. In a very hot wok (pan), pour oil, add mushrooms, stir, cook 2 minutes. Add pork, stirring constantly. Add onions, peppers, carrots, cabbage and a dash of salt and pepper. Add rice, soy sauce and egg strips. Lower heat and continue stirring for 5 minutes.
