LASAGNE 
SAUCE:

1 lb. ground hot sausage
1-2 lbs. ground beef
1 med. chopped onion
1-2 cloves garlic, chopped
Sage to taste
Lemon pepper to taste
1 lb. can or 1 qt. tomatoes
2 (6 oz.) cans tomato paste
Salt, pepper, basil, oregano, marjoram & thyme (or Italian seasoning) to taste
Dash of sugar

Brown sausage, beef, onion and garlic. Season with lemon pepper and sage. Drain grease. Add tomatoes, tomato paste, salt, pepper and spices. Bring to a slow boil. Reduce heat and let simmer 30 minutes or longer.

FILLING:

2 eggs, beaten
3 c. ricotta cheese
1/2 c. grated Parmesan cheese
2 tbsp. parsley flakes
1 tsp. salt
2-4 c. grated Mozzarella cheese
1/2 tsp. pepper
Lasagna noodles

To beaten eggs, add ricotta and Parmesan cheeses, parsley flakes, salt and pepper. Cook lasagne noodles according to package directions. In 9"x13" pan, layer a bit of sauce to coat bottom of pan. Layer noodles, filling, sauce, cheese. Repeat layers. Top with Parmesan cheese. Bake at 375 degrees for 30 minutes. Recipe can be prepared in advance and refrigerated. If refrigerated, bake 45 minutes. Let stand 10 minutes before serving.
