KALE SOUP 
1/4 lb. linguica, sliced
1 can red kidney beans
1 med. onion, chopped
2 to 3 lg. potatoes, diced
1 beef shank
1 med. bunch of kale, cut up (straight or curly)
2 qts. water
Salt & pepper to taste

Put all ingredients in large kettle. Bring to a boil; boil for approximately 1/2 hour. Simmer 1 1/2 to 2 more hours or until meat on shank is tender. Remove meat from bone and put into soup. Discard bone and serve.
