APRICOT CAKE 
1 pkg. yellow cake mix
3/4 c. cooking oil
3/4 c. apricot nectar
4 eggs, beat yellow in one at a time
2 tsp. lemon extract

Fold in beaten egg whites. Bake in bundt pan at 350 degrees about 1 hour or until cake begins to separate from side of pan. Glaze while HOT with juice of 1 lemon and grated rind of same and 1 cup of powdered sugar, mixed.
