Eggplant Hellmann's mayonnaise Salt & pepper Parmesan cheese Wash and slice eggplant 3/4" thick. Place in baking pan. Spread with Hellmann's mayonnaise. Sprinkle with salt and pepper to taste. Sprinkle on Parmesan cheese. Seal with foil. Bake 35 minutes at 350 degrees. Uncover and bake until cheese is bubbly and brown. Very good! | |
