KENTUCKY POUND CAKE 
4 eggs, separated
1 1/4 c. oil
2 1/2 c. self-rising flour
2 c. sugar
2 1/2 tsp. cinnamon
1 tbsp. vanilla
2 c. nuts, chopped
1 med. can crushed pineapple

Cream sugar and oil. Add egg yolks. Mix all ingredients except egg whites. Beat egg whites until stiff; fold into batter. Bake at 325 degrees for 1 hour and 20 minutes in greased and floured tube pan; put cake in cold oven.

ICING:

1 stick butter, melted
1 c. light brown sugar
1/2 c. evaporated milk

Mix butter, sugar, and milk; cook for 5 minutes, stirring constantly. Cook and spread on cake.
