KENTUCKY WONDER POUND CAKE | |
2 1/2 c. self-rising flour 1 1/2 c. corn oil 2 c. sugar 4 egg yolks 1 sm. can crushed pineapple, juice included 2 tbsp. hot water 1 tsp. cinnamon (if desired) 1 tsp. nutmeg (if desired) 1 c. chopped pecans or walnuts 4 egg whites, stiffly beaten Combine all ingredients except nuts and egg whites. Beat well then add nuts and fold in stiffly beaten egg whites. Pour into greased and floured tube pan and bake at 350 degrees for 1 hour. Do not beat after you add the nuts and egg whites. Just stir them in with a spoon. |
