MICROWAVE FRESH BLACK EYED PEAS 
4 c. shelled fresh peas
3 slices bacon, coarsely chopped
1 c. water
1 med. onion, chopped
3/4 tsp. salt
1/2 tsp. ground red pepper
1 bay leaf

Combine all ingredients in a 2 quart casserole dish, mixing well. Cover with heavy duty plastic wrap. Microwave on HIGH for 4 minutes; stir well. Cover and microwave at MEDIUM for 20 minutes. Let stand, covered 5 minutes. Discard bay leaf.

Yield: 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
