10 corn tortillas 1 1/2 lbs. tomatoes 1 sm. onion 4 cloves of garlic 1/4 c. green chilies Salt to taste 1/2 tsp. Italian seasoning 1 lb. cheddar cheese Chicken style veg. meat (optional) Cut corn tortillas in small squares and fry in oil until golden, set aside. Blend tomatoes, 1/3 of onion and garlic until very fine. Cook this sauce in oil adding finely chopped green chili, add salt and seasonings and let boil in low heat until thickened, add tortillas and stir and let it boil again, add cheese. Put in a platter and sprinkle with onions. If you wish you can serve with sour cream. Serve with beans. |
