COUNTRY SOUP 
3 tbsp. Olive Oil
3 cloves Garlic, Chopped
1/4 cup Onion Diced
1/4 cup Red Pepper, Diced
1 14 oz. Can Garbanzo Beans DO NOT DRAIN
2 can Chicken Bouillon
3 Potatoes, Cut into 1/2-inch Pieces
3 tbsp. Diced Tomatoes or Spaghetti Sauce
2 tbsp. Parsley
1 tsp. Paprika or Saffron
1 bag Baby Spinach Leaves

Sauté garlic, onion and pepper in olive oil. Add garbanzo beans with water, bouillon, potatoes, tomatoes or spaghetti sauce, parsley and saffron. Simmer covered until potatoes are soft. Add spinach, mix and cover, simmer at least a few minutes.
