SPICY APPLES & RICE 
1 lg. tart apples, unpeeled & chopped
1/2 c. chopped onion
1/2 c. chopped celery
1 tbsp. butter
1 c. cooked rice
1 tbsp. brown sugar
1/4 tsp. allspice
1/2 c. raisins
1/2 c. sliced almonds

Pour boiling water over raisins and let stand to plump them, then drain. Cook celery and onions in butter until tender crisp. Stir in spices, rice and raisins. Heat thoroughly. Add apple, cover and let stand 5 minutes. Sprinkle with almonds. Serves 6.
