PRALINE LOUISIANA YAMS 
1/2 c. granulated brown sugar
1/2 c. heavy cream
2 tbsp. butter
1/2 c. chopped pecans or filberts
1/4 tsp. salt
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1 lb. can yams (heated & drained)
(Or 6 med. yams, cooked, peeled & quartered)

Place sugar, cream, butter, pecans, salt, cinnamon and nutmeg in thick 1 quart saucepan. Stir over low heat for 7 minutes or until ingredients blend and form heavy syrup. Pour over hot yams in serving dish. Yield 6 servings.
