PRUNE AND SPICE QUICK BREAD 
1 c. sifted all-purpose flour
1/2 c. unsifted whole wheat flour
1/2 tsp. baking soda
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
1/4 tsp. salt
1 lg. egg
1/2 c. sugar
1 c. buttermilk
1 tbsp. corn oil
1/2 to 1 c. chopped pitted prunes

In large bowl, combine flour, whole wheat flour, baking soda, cinnamon, nutmeg, and salt.

In another bowl, combine egg and sugar; beat well with fork; stir in buttermilk and corn oil. Add flour mixture and stir until dry ingredients are well moistened. Mix in prunes. Bake 40 minutes at 375 degrees in loaf pan. Use non-stick cooking spray on pan. Cool 5 minutes. Makes 1 loaf.
