CHOCOLATE ZUCCHINI BREAD 
3 eggs
1 c. oil
2 c. sugar
2 c. unpeeled grated zucchini
1 tbsp. vanilla
3 c. flour
2 tsp. baking soda
2 tsp. cinnamon
3 tsp. cocoa
1/4 tsp. salt

Mix together eggs, oil, and sugar; add zucchini and vanilla. Mix well and set aside. Blend together flour, baking soda, cinnamon, cocoa and salt. Slowly add to egg mixture. Fold in 1 cup walnuts if desired.

Grease and flour 2 loaf pans.

Bake at 350°F for 50-60 minutes or 24 muffins and bake 25 minutes. Frost with Cream Cheese Frosting.

CREAM CHEESE FROSTING:

1 (3 oz.) pkg. cream cheese
1/4 c. butter
1 tsp. vanilla
2 c. powdered sugar

Cream together cream cheese, butter, vanilla until smooth. Slowly add powdered sugar.
