DARK ZUCCHINI BREAD 
3 eggs
2 c. firmly packed brown sugar
3 tsp. vanilla
3 c. grated zucchini (can be firm flesh of very lg. one, peeled if tough)
2 tsp. cinnamon
1/2 c. chopped nuts
1 tbsp. molasses
4 c. unsifted flour
1 tsp. baking soda
1 tsp. pumpkin pie spice
1 c. vegetable oil

Beat eggs. Add oil and sugar; beat well. Add vanilla, grated zucchini and molasses; beat. Mix and add dry ingredients; add nuts and beat. Bake in greased and floured small loaf pans at 350 degrees for 1 hour. Cool until bread will remove easily, then cool on rack. Freezes well.
