CHICKEN CORDON BLEU 
1 skinless, boneless chicken breast
2 thin slices cooked ham
2 thin slices Swiss diet cheese
Grated nutmeg, salt & pepper (to taste)
2 tbsp. white wine or lemon juice
1 tbsp. grated Parmesan cheese
2 tbsp. Italian seasoned bread crumbs

Preheat oven to 425 degrees. Slice chicken breast in half. Dice or slice ham and cheese. Divide equally on top of chicken breasts. Sprinkle nutmeg, salt and pepper to taste. Roll each cutlet with filling inside. Dip each roll first in wine or lemon juice then in Parmesan cheese and finally in bread crumbs.

Arrange each roll seam side down on a cooking tray, sprayed with Pam. Bake uncovered in preheated oven for 20 to 25 minutes, until cheese begins to melt. Makes 2 servings. 255 calories each.
