CHICKEN CORDON BLEU 
3 chicken breasts, split
4 oz. lean cooked ham, sliced
Fresh minced parsley
1 tsp. salt
5 tbsp. fine bread crumbs
2 tsp. vegetable oil
4 oz. Swiss cheese, sliced
Instant garlic powder
1/4 tsp. pepper

Skin and bone the chicken breasts. Flatten slightly with edge of plate. Place a ham and cheese on each chicken piece. Sprinkle with the minced parsley, garlic powder, salt and pepper. Roll up chicken to enclose ham and cheese. Secure with wooden toothpick. Blend bread crumbs with oil and pour onto flat plate (I find it takes a lot more bread crumbs and oil that it asks for).

Press each chicken roll into mixture to coat lightly. Place chicken rolls onto a nonstick baking sheet and bake at 350 degrees for 35 minutes or until chicken is tender.
