OVEN FRIED POTATOES 
2 med. baking potatoes
Nonstick cooking spray
Salt and pepper

Scrub potatoes. Pat dry with paper towels. Do not peel. Cut each potato in half lengthwise; cut each half into 5 wedges. Preheat oven to 400 degrees. Spray cookie sheet with non-stick cooking spray.

Place potato wedges, cut sides down, on cookie sheet. Sprinkle with salt and pepper to taste. Bake 15 minutes; turn wedges so other cut sides are down. Sprinkle with additional salt and pepper; bake 15 minutes longer, or until potato wedges are golden and fork tender. Makes 4 servings at 63 calories per serving.
